VIDALIA ONION PIE
One of my absolute favorites:
2 very large Vidalia onions
1/2 lb. butter
3 large eggs, beaten
1 cup of regular sour cream
Salt, papper & tabasco to taste
1 frozen deep dish pie shell, thawed but not baked
2/3 cup grated parmesan cheese
Saute onions in butter until limp & slightly browned. Put in bowl. Combine well with whisk - the eggs and sour cream and then add to the onions/butter. Season with salt, pepper & tabasco. Stir well. Pour mixture into pie shell & sprinkle with the cheese. Bake in preheated 450 degree oven for 20 minutes. Redce heat to 325 degrees and bake 20 minutes longer or until set and nicely browned on top. Remove from oven and let cool on rack for 10 minutes. Enjoy!
NOTE: Leftover pie could be reheated or microwaved - but there never are leftovers.
